The Dutch Baby - also known as the Puffed Pancake - can be made with fresh apples or other seasonal fruits. We’ll show you how to make a Dutch Baby quickly and easily in your Dutch Oven.
Dutch Oven Size

  • 1 tbsp. Oil (for example coconut oil)
  • 1 apple
  • 100 g spelt flour
  • 50 g oatmeal
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 tbsp. sugar
  • 3 eggs (medium-sized)
  • 3 tbsp. quark (1,5% fat)

  1. Peel the apple and cut into slices. Put the oil into the Dutch Oven lid and preheat with 3 briquettes underneath.

  2. Mix the remaining ingredients and put the batter into the lid.

  3. Place the apple slices on top and bake for about 30 minutes. Put the Dutch Oven upside down on top of the lid and add 7 briquettes on top of it.

Tip: A piece of the warm Dutch Baby is best served with ice cream. You can also use (seasonal) fruit to your own taste.
